This year’s competition carried the theme “Kaon ta!”, a warm invitation that embodies Filipino togetherness and the joy of shared dining. The event gathered over 200 chefs, students, and culinary professionals from 35 schools, hotels, and restaurants nationwide, reinforcing the Philippines’ rich culinary heritage.
Three student delegates from CHTM earned distinctions in the student categories, while one representative also brought home an award in the professional division, marking another milestone for the University’s growing reputation in the hospitality and culinary arts.
Leading the winners’ circle was Clarisse Sanlea Go, who won a Silver Award in Coffee Concoction for her exceptional brewing artistry. Jullana Victoria also clinched a Silver Award in Cocktail Mixing, impressing judges with her creativity and precision. Meanwhile, Gabriel Anonat captured a Bronze Award in Flairtending, showcasing flair and finesse in bartending techniques.
In the professional category, Mr. John Gabriel Ledesma, FCU faculty member and Culinary Team coach, secured a Bronze Award for KBL (Kadyos, Baboy, Langka), a celebrated Ilonggo dish, demonstrating both skill and cultural appreciation in local cuisine.
Other student participants who proudly represented FCU in various culinary competitions included Lezie May Esportuno, Chester Zachary Oro, Ramel Villasis, and Joshua Caminoy.
The Bar and Dining competitors were coached by Mr. John Patrick Romero, while Mr. Ledesma mentored the Culinary Team.
Organized by the Iloilo City Government through the City MICE Center and the Iloilo Festivals Foundation, Inc., the 16th National Food Showdown served as a premier platform to showcase regional talents and flavors. With Chef Myrna Segismundo leading the panel of judges, the event also highlighted Iloilo City’s distinction as the first UNESCO Creative City of Gastronomy in the Philippines.
Featuring 215 entries across seven major categories under the sub-theme “Balik Isla: Foraging in the Philippine Countryside,” the two-day culinary tilt celebrated innovation, sustainability, and Filipino identity on the plate.
CHTM Dean Dr. Maria Anna Lissa Ruba commended the delegates for bringing honor to the University, saying their achievements “reflect the passion, creativity, and excellence that define every Filamerian.”
